My Weekend in Snapshots

Happy (early) Memorial Day! How are you spending the holiday? I was able to take some time off from work this upcoming week, so I'm looking forward to finally having some time to myself! (I'm an obvious introvert...). Here is my weekend in snapshots:

Luis and I hit up one of our favorite garden shops this week. I got two tomato plants (Roma and Cherry), a sizable rosemary bush, three Marigolds, and a basil plant.

Luis and I moved about a month and a half ago but I still have piles of stuff around (mostly books). This is only a fraction of the total amount of books I own. I'm a book hoarder...


My cats love looking out our windows. I love their silhouettes in the setting sun.


I love that my husband reads. 

This is random but I learned how to froth milk to add to tea/coffee without a frother. I'm now obsessed with adding it to my tea. I'm probably do a mini-post on it.

I made this poblano crema enchilada dish this week. Delicious! Although, I didn't make mine vegan. I used dairy crema.


Rosemary is one of the best scents in the world. 




 I walked into the kitchen and saw this.... I laughed harder than I probably should have!

A Week in My Life: Week 26

Here's what the past week looked like:

We've had nothing but rain this week. It's become a running joke.

We started our week off with a mini cookout at my in-laws. I always love how it's an delicious mixture of classic American (potato salad) and class Puerto Rican (rice and beans and adobo chicken). Tasty!

It's been such a weird summer with all the rain and the fact that it wasn't hot until about a week ago. We've been trying to spend as much time outside as we can now that it's gotten warm.

Ending the week sipping a cup of Chai tea, with a touch of coconut milk, in my new over-sized Target mugs. I've got the window open with the breeze moving through and giving our apartment a breath of fresh air. I love it.

A Week in My Life: Week 23

I have very few photos for you from this week. Sorry! So this post will be short and sweet. Here's what the past week looked like:

Apparently kitty likes yogurt covered raisins as much as I do.

Am I the only one who is obsessed with Caramel Apple pops??

I hate chipped nail polish.

 The light in our bedroom shines in so brightly during the morning. It's beautiful.


I had no idea that Lowes had such great prices on their herbs and plants! I bought a huge mint plant for less that $3. Now let's see if I can keep it alive...

A Week in My Life: Week 20

Here's what the past week looked like:

A week or so ago Luis and I went to Scoops Ice Cream with my brother, Andrew, and his girlfriend, Bailey, when we saw this sign. It made me really happy.

Daffodils have the ability to completely brighten my mood. 

One of my spring cleaning objectives was to donate all of the clothes that I haven't worn within the past year. I got rid of three bags!

I made some corn tortillas earlier this week. I really dislike the ones that are sold in the grocery stores. They are pretty cardboard-y in their texture. I realized that you can make them without a tortilla press- you just need a really thick, heavy book and plastic wrap.

This is a really weird statement, but there's something about fresh fish that makes me happy...

Ever since the weather improved, Luis and I have been walking everywhere we can. I got really sunburned the other day!


This here is one of my favorite meals to date. It's Pecan Crusted Chicken over a salad with homemade honey dijon dressing. I found the recipe in a magazine but if it sounds good, someone copied it to this message board. Trust me, it's incredible.

Another amazing dish are these Thai Style Green Beans. I always struggle with cooking beans because they are naturally bland, but these changed my mind about green beans.

Sorry for the blurriness of this picture. I had to whip out my telephoto lens and that can be shaky if you aren't using a tripod. Male cardinals are gorgeous; this little guy was making my cats freak out. It was pretty amusing.

During one of our walks, I encountered two snakes on the path. I hate hate hate snakes. They terrify me and I just can't be near them. Lucky for me, he offered to remove them from the path. I didn't realize he was going to just pick them up. I was cringing the whole time...

A Week in My Life: Week 15

Here's what the past week looked like:


I love this sign near where we live; it's a wonderful reminder. 


 I've been propagating basil for a few weeks and the roots are finally at a length where they can be planted. It makes my kitchen smell wonderful!


I made black bean burgers with Sriracha mayo sauce. It was my first time having a meatless burger and I have to say, it was pretty good.


 My in-laws recently returned from Puerto Rico and they brought back some coconut candy! I am a huge coconut fanatic and these were eaten up within the next day...


Desperately waiting for leaves to start budding on the trees. 


I made gluten-free chicken marsala this week. The only thing different is that I used a gluten free flour. It was amazing. I added a side of sauteed zucchini with dill. 


Reading a magazine on some down time. In other news, I'm obsessed with Larabars


We may not have buds on the trees yet, but the moss has certainly taken over. 


 Luis and I live near the Chicago branch of the Cancer Treatment Centers of America and they've been really expanding. They're adding a new wing so it's been quite noisy in the mornings lately.

This was the first thing I ate this morning. Is that bad? I made more Sriracha mayo sauce to go with it.

A Week in My Life: Week 14


I will never understand lawn deer... also note that the deer to the left is missing it's ears. Poor thing. 


 Still no budding leaves. Hopefully we'll see some within the next few weeks.

 My favorite breakfast meal: a strawberry parfait.

Things I'm digging: Burt's Bees all natural deodorant. This stuff is great; lasts all day and is aluminum free. 


Luis and I took advantage of a warmer day this week and headed to Independence Grove, a mini state park nearby.

 The park has bike trails and little lakes all over the park. It's a beautiful valley-like park. It's the perfect location for an impromptu picnic. I can't wait for things to warm up!
