Life Lately...

I had the whole week off last week, and it was wonderful. Working 2 jobs kicks my butt... Here's a peek into my life lately:



Luis and I live within walking distance from our city's museum. They had a beautiful watercolor gallery on display this past week. Additionally, the mammoth they have on display is the largest and most complete mammoth excavated in North America (according to the museum's website).

I'm a serious amateur "gardener," so I opted for container gardening this year. These are my tomatoes. Does anyone have an tips on growing Roma and Red Cherry tomatoes??

Hanging out with the family on Memorial Day. 

We played a heated game of Apples to Apples.

We headed to Devil's Lake State Park to enjoy the sun and the water. We rented a row boat and then went back for a canoe. Can you tell we love boating??


The Park is seriously gorgeous. The hiking paths are rigorous and beautiful. The rock formations along the bluffs are stunning. You can easily spend all day here, which is what we did!

I found this little guy hanging out in a log. It freaked me out until I realized it was just a toad (I'm terrified of snakes...I thought that's what it might be).

A Week in My Life: Week 5

Here's what the past week looked like:


Cooking with wine. There's no other way to do it. 


 My new favorite snack: Honeycrisp apples and organic honey.


I have no idea how Vee got up here... This shelf is about three feet higher than me (I'm 5'7"...). I mean, I know cats can really jump high but... dang. 


Enjoying a honey banana smoothie (with a dash of nutmeg!) and my new bon appetit magazine! 


Found this gem inside the magazine: nacho heaven!!!


We got tons of snow this week. It was crazy. 


So pretty. 


I experienced a massive craving for Cocoa Puffs this week... So. Random. 


Is there anything more tranquil than journaling in the morning?


Utilizing our Nutri-Bullet that we got for Christmas. What an easy way to get your daily doses of fruits and veggies.

A Week in My Life: Week 2

Here's what the past week looked like:


I've started drinking coconut water! I'm not sure that an exclamation point was needed there... Either way. It's reeeally tasty.


Early morning sun shining through the blinds. 


Noodleless lasagna... this stuff was exquis'.

To begin our search for the perfect couch, Luis and I traveled to IKEA earlier this week where we had Swedish meatballs in their restaurant. I had to recreate the recipe a few days later (complete with Lingonberry sauce!)


I'm beginning to notice a focus on food shots in my Week in My Life posts... I can't help it. Food consumes me (and I, it! Hehe). Sun-dried tomato baked penne pasta, gluten-free of course.


Kitty, plopped down in the middle of the kitchen. She leads such an exhausting life...


Do you cook with shallots? I love them! 


I'm not quite sure what came over me today... I almost never take photos of myself. But here you are, a few selfies. Oh God, did I just use the word 'selfie'?

A Week in My Life: Week 28

Hello everyone! I hope that you had a wonderful weekend, full of rest, relaxation and joy. Here's what my past week looked like:


Lounging with my kitty. I got a cold earlier in the week and she kept me company while I napped. 


These two photos are courtesy of my best friend who came to my senior thesis presentations this past week. Needless to say, it was very nerve wracking, but I'm so glad to be through it and over it! My thesis is titled "'Detected with a Critical Eye': An Exploration into Misreading and Communication in Pride and Prejudice."


I got coffee with my two best friends earlier in the week. Whoever made my coffee did an amazing job with this design! 


Both my parents and my friend brought me flowers to my thesis presentation. I combined them in this bouquet!


Enjoying the simple pleasures of life. 
 

My mother-in-law gave me some beautiful vintage ornaments for our tree! 


Reading Canal House Cooks Every Day (which is amazing!) while eating breakfast. This was my first piece of gluten-free toast and I made Devonshire cream to add with it. SO delicious.

A Week in My Life: Week 27

Here's what the past week looked like:


Looking forward to the Christmas weather! Although today was almost 60 degrees...


Luis and I went out one night after all the shops were closed to view the Christmas lights.


I have so many pictures of my kitty this time around. But mostly because I downloaded new Photoshop actions that I used on these photos. You can find those for free here. They are amazing!


This weekend I helped my friend with her daughter's first birthday party! I can't believe Sophie is already a year old. Is she not the cutest little toddler you've ever seen!?

Found this awesome wall mural on our Christmas light adventure. 


I know this post is a little photo-lite. My undergraduate thesis presentation is coming up this week so I've been holed up in my apartment writing and practicing. Have a great week!
